Lemon Rice Dish – Jain Recipe

a hassle-free lunch-box option, lemon rice is a favourite with young and old alike in southern india. lemon adds the tanginess, while the tempering imparts the aroma to this simple rice delicacy.

  • 3 cups boiled rice
  • 4 tablespoons oil
  • 1/4 teaspoon of asafoetida (hing)
  • 1/2 teaspoon fenugreek seeds (methi seeds)
  • 1/2 teaspoon mustard seeds
  • 10-12 curry leaves
  • 1 tablespoon split black gram (urad dal)
  • 2 whole dry red chilies
  • 1 teaspoon turmeric powder
  • 1 cup peanuts
  • 6 tablespoons lemon juice
  • coriander leaves (to garnish)
  • salt to taste


  • heat oil in a non stick pan.
  • add asafoetida, mustard seeds, methi seeds, dry red chilies, curry leaves, peanuts and urad dal.
  • sauté till the dal turns golden brown.
  • then add the remaining ingredients, turmeric powder, and rice, salt and lemon juice.
  • sauté the mixture well.
  • cook on a low flame till the rice gets cooked properly.
  • garnish with little coriander and serve hot.
